
Winter Creek is situated at Williamstown in the far South of the Barossa Valley and is owned by David and Pam Cross. Being in the foothills of the Barossa Ranges, our vineyard is far cooler than most of the Barossa. Our soils are thin and skeletal ensuring low yields and the resulting wines reflect our cooler climate with vivid fruit flavours and tight structure. Two grape varieties are grown in our vineyard, Shiraz and Grenache. Great care is taken in the vineyard to produce extreme quality fruit. Our Shiraz utilizes the Smart Dyson trellising and canopy management. This gives a lifted and divided canopy with two fruiting zones ensuring a high degree of leaf and fruit exposure to sunlight. This ensures the development of intense and complex flavours in the resulting wine along with balancing acid and tannin. Our Grenache vines are 70 years old and produce a small crop of fruit resulting in wine that has wonderful floral aromas of dark berries. The age of the vines ensures that the crop levels are minimal which intensifies fruit flavours and structure. We source outstanding fruit for our Sauvignon Blanc and Pinot Gris from the cool Adelaide Hills. Both these varieties show at their best when grown in a cool climate and our wines are outstanding examples of their style. Our winemaking philosophy is to allow the terrior of our distinctive vineyard site to be evident in our wines. We pick our grapes when ripe but not super ripe, use only French oak barrels and our wines are not filtered or fined. Our aim is to produce wines with a classic acid/tannin structure, vivid fruit flavours and with complexity coming from outstanding quality grapes not from winemaking "tricks".
