PENFOLDS had been producing fine fortified wines for almost a century before the advent of a shift in winemaking philosophy that would have a profound effect on the Australian wine industry even today. Building on the ground-breaking work of the legendary Ray Beckwith, who’s research in the 1930’s and 40’s into overcoming bacterial spoilage and stability problems laid the framework for a shift into high quality dry table wines, the winemaking team of the day set out on a vinous voyage of discovery that would re-write the rules of Australian wine.
